Asiago Stuffed Meatballs Recipe

Asiago Stuffed Meatballs
Meatballs are amazing when they are stuffed with fresh asiago cheese. These meatballs use a combination of ground beef and pork. The meatball ingredients are mixed in a bowl and then formed into meatballs that are stuffed with cheese. The meatballs get a lot of flavor from garlic, parmesan, salt and pepper. You can fry the meatballs in the pan but I like to bake them in the oven, it is less messy and requires very little effort. You can use whatever type of pasta sauce you want for this recipe. I like marinara. If you cannot find fresh asiago you can use mozzarella instead. Enjoy.

Asiago Stuffed Meatballs

Yield: 4 Servings

Ingredients:

  • 6 ounces fresh asiago cheese (cut into 1 inch cubes)
  • 1/2 lb. ground beef
  • 1/2 lb. ground pork
  • 1 c. breadcrumbs
  • 1 egg
  • 1/4 cup chopped parsley (divided)
  • 2 garlic cloves (minced)
  • 1/4 cup grated parmesan cheese
  • salt
  • Pepper

 

Directions:

  1. Preheat the oven to 350 degrees F. In a large bowl combine ground beef, pork, breadcrumbs, eggs, 2 tablespoons of chopped parsley, garlic and parmesan cheese. Season with salt and pepper to taste. Mix well using your hands until well combined. Scoop some of the meat mixture into a small ball. Press 1 cube of the cheese into the center, sealing tightly around the cheese. Place onto a greased baking sheet. Repeat until all of the meatballs are prepared.
  2. Place into the oven and bake at 350 degrees F. for 30-40 minutes or until fully cooked (the internal temperature has reached 160 degrees F). Serve with marinara sauce and cooked pasta. Garnish with remaining parsley and parmesan cheese.

Korean Style Pork Chops
These Korean style pork chops are delicious and very easy to prepare for dinner. The pork chops are marinated and then fried in the pan and placed into the oven to finish cooking. You can use either boneless or bone-in pork chops. The marinade gets a lot of flavor from ingredients such as sesame oil, soy sauce, garlic and ginger. You can also marinate these pork chops for longer and then place them onto the grill instead of using the frying pan and the oven if you would prefer. Enjoy.

Korean Style Pork Chops

Yield: 4 Servings

Ingredients:

  • 4 boneless pork chops
  • 1 tablespoon olive oil
  • ¼ cup soy sauce
  • 2 tablespoons honey
  • 4 garlic cloves (minced)
  • 1 teaspoon sesame oil
  • 1 teaspoon ginger (minced)
  • 2 teaspoons sriracha sauce
  • Ground black pepper to taste

 

Directions:

  1. Preheat oven to 400 degrees F. In a medium bowl whisk together soy sauce, honey, garlic, ginger, sesame oil, and sriracha sauce. Add pork chops and mix well to coat. Let marinate for 20 minutes.
  2. Heat olive oil in a large skillet over medium-high heat. Add the pork chops, without the marinade, and cook for about 5 minutes on the first side. Flip and pour the remaining marinade over the pork chops. Cook for another 5 minutes.
  3. Place the skillet into the oven to finish cooking (the internal temperature has reached 145 degrees F.

  • Salt and pepper
  • ¾ cup shredded cheddar cheese
  • 4 whisked eggs
  • 4 slices cooked bacon (chopped)
  • Sliced green onions

 

Directions:

  1. Add canola oil to a large oven-safe skillet over medium-heat. Once the oil is hot add the hash browns to the skillet and season with salt and pepper. Cook until potatoes are crisp.
  2. Add ½  cup cheddar cheese, eggs, bacon, remaining cheese and green onions.
  3. Place into the oven and bake at 350 degrees F. for 10 minutes or until eggs have set and cheese is melted.

Pork Chop Spice Rub
I am always looking for a good spice rub for meat such as pork chops. This spice rub consists of very common ingredients that you probably already have on hand. The rub is just a combination of paprika, black pepper, salt, sugar, chili powder, garlic powder, onion powder and cayenne pepper. This is great to rub on boneless or bone-in pork chops and after the pork is coated with the rub, it can be grilled or fried in the pan. You can also use this dry rub on other meats such as chicken. Enjoy.

  • 1 tablespoon ground black pepper
  • 1 tablespoon kosher salt
  • ¾ teaspoon sugar
  • ¾ teaspoon chili powder

  • ¾ teaspoon onion powder
  • ¼ teaspoon cayenne pepper

 

Directions:

  1. In a small bowl combine paprika, black pepper, salt, sugar, chili powder, garlic powder, onion powder and cayenne pepper. Mix well.
  2. The dry rub can be used to rub on pork chops before cooking.
