Smoked Sausage Spaghetti Recipe

Smoked Sausage Spaghetti
This smoked sausage spaghetti is easy to prepare and makes for a great dinner. The smoked sausage is sliced and then fried in the pan before the sauce is prepared. The sauce is a combination of crushed tomatoes, wine, and various seasonings. Fresh parsley and basil are added to give this dish a nice and fresh flavor. I like to serve this recipe with garlic bread. Enjoy.

Smoked Sausage Spaghetti

Smoked Sausage Spaghetti

Yield: 4 Servings

Ingredients:

  • 3 tablespoons plus 1 teaspoon olive oil
  • 13 ounces smoked sausage (cut into slices)
  • 3 teaspoons minced garlic
  • 1 ½ teaspoons crushed red pepper flakes
  • 1 (28 ounce) can crushed tomatoes
  • ½ cup red wine
  • ¾ teaspoon dried oregano
  • 1 teaspoon salt
  • 1lb spaghetti noodles
  • ¼ cup fresh parsley (chopped)
  • ¼ cup fresh basil (chopped)

 

Directions:

  1. Heat 1 teaspoon of olive oil in a large deep skillet over medium heat. Add the sausage slices in a single layer and cook, turning once until browned on both sides. Remove from the skillet and place onto a plate lined with a paper towel to drain.  
  2. Add 3 tablespoons of oil to the skillet and increase the heat to medium-high. Add garlic and red pepper flakes. Stir around and cook for a few seconds. Add crushed tomatoes, wine, oregano, salt and stir. Reduce heat and simmer for 15-18 minutes, stirring occasionally.
  3. Cook the spaghetti noodles according to package directions. Once the spaghetti has finished cooking, drain and add the spaghetti in with the sauce. Add the smoked sausage, parsley and basil and stir.

Mexican Breakfast Quesadillas

These Mexican breakfast style quesadillas consist of chorizo, egg, and cheese. There is just something about chorizo sausage that is amazing with scrambled eggs. The chorizo is homemade but if you want to save some time you could buy it from the store as well. However, I highly recommend preparing it yourself from scratch as it is so much better than what you can typically find in the store. If you want to prepare it yourself you can find the recipe here. For the cheese, you can use several different kinds but I like queso chihuahua. Enjoy.

Mexican Breakfast Quesadillas

Mexican Breakfast Quesadillas

Yield: 4 Servings

Ingredients:

  • 4 (12-inch flour tortillas)
  • 2 cups queso chihuahua cheese
  • 3 large eggs
  • 1/2lb chorizo sausage (homemade or store-bought)
  • Butter (for spreading)

 

Directions:

  1. In a medium fry pan cook the chorizo while breaking up into chunks with a spatula until fully cooked. Drain off any excess grease.
  2. While the chorizo is cooking, whisk the eggs and a little bit of salt and pepper in a bowl. Scramble the eggs in a large non-stick skillet until slightly firm. Set aside.
  3. Preheat a large nonstick skillet or griddle to medium-high heat. Butter one side of a flour tortilla. Cook the flour tortilla for 20 seconds, flip. Cover half the tortilla surface with shredded cheese and bits of chorizo sausage and scrambled eggs. Fold the tortilla in half and press down gently with a spatula and cook for 30 seconds on each side. Remove from the pan and cut the quesadilla into 3 wedges.

Honey Mustard Grilled Pork Chops
These honey mustard pork chops are great on the grill during the warmer months. Using pork is a great alternative to chicken and is a bit cheaper to purchase. This recipe uses a honey mustard sauce for both brushing while grilling and for dipping. The honey mustard sauce gets a lot of flavor from mustard, honey, and apple cider vinegar. Preparing this recipe is easy enough, the honey mustard sauce is prepared on the stovetop and then basted onto the pork while it is being grilled to perfection. I like to serve these pork chops with a cold salad. Enjoy.

Honey Mustard Grilled Pork Chops

Yield: 4 Servings

Ingredients:

  • 2 tablespoons apple cider vinegar
  • ½ teaspoon cornstarch
  • ½ cup pure honey
  • 3 tablespoons whole grain mustard
  • 1 teaspoon onion powder
  • ¼ teaspoon cayenne pepper
  • ¼ cup brown sugar
  • Salt and ground black pepper (to taste)
  • 4 pork chops

 

Directions:

  1. In medium saucepan, whisk together the vinegar and cornstarch until fully dissolved. Add in the honey, mustard, onion powder, cayenne pepper, and brown sugar. Whisk to combine and simmer over medium heat while whisking until the glaze has reduced a bit, about 5 minutes. Separate the glaze into two small bowls. Reserving one half for dipping and keeping one half for basting the pork chops while grilling.
  2. Season the pork chops on both sides with salt and pepper. Lightly grease the grates of an outdoor grill. Heat the grill to medium-high heat. Add the pork chops and grill for about 3-4 minutes per side or until fully cooked (the internal temperature has reached 145 degrees F.). Brush the pork chops with the half of the glaze used for basting while they are grilling.
  3. Serve with the reserved half of the glaze that was not used for basting.

Asiago Stuffed Meatballs Recipe

Asiago Stuffed Meatballs
Meatballs are amazing when they are stuffed with fresh asiago cheese. These meatballs use a combination of ground beef and pork. The meatball ingredients are mixed in a bowl and then formed into meatballs that are stuffed with cheese. The meatballs get a lot of flavor from garlic, parmesan, salt and pepper. You can fry the meatballs in the pan but I like to bake them in the oven, it is less messy and requires very little effort. You can use whatever type of pasta sauce you want for this recipe. I like marinara. If you cannot find fresh asiago you can use mozzarella instead. Enjoy.

Asiago Stuffed Meatballs

Yield: 4 Servings

Ingredients:

  • 6 ounces fresh asiago cheese (cut into 1 inch cubes)
  • 1/2 lb. ground beef
  • 1/2 lb. ground pork
  • 1 c. breadcrumbs
  • 1 egg
  • 1/4 cup chopped parsley (divided)
  • 2 garlic cloves (minced)
  • 1/4 cup grated parmesan cheese
  • salt
  • Pepper

 

Directions:

  1. Preheat the oven to 350 degrees F. In a large bowl combine ground beef, pork, breadcrumbs, eggs, 2 tablespoons of chopped parsley, garlic and parmesan cheese. Season with salt and pepper to taste. Mix well using your hands until well combined. Scoop some of the meat mixture into a small ball. Press 1 cube of the cheese into the center, sealing tightly around the cheese. Place onto a greased baking sheet. Repeat until all of the meatballs are prepared.
  2. Place into the oven and bake at 350 degrees F. for 30-40 minutes or until fully cooked (the internal temperature has reached 160 degrees F). Serve with marinara sauce and cooked pasta. Garnish with remaining parsley and parmesan cheese.
