These smoked sausage rolls are another great recipe to prepare on the grill. These rolls consists of grilled smoked sausage or kielbasa, white bbq sauce, a fried sauerkraut and onion mixture and swiss cheese. The combination of flavors on these rolls is absolutely delicious. The white bbq sauce gets a lot of flavor from mustard, horseradish and vinegar. If you don’t have an outdoor grill, these could also be prepared on the stovetop in a frying pan or using an indoor grill pan. If you want you can toast the hot dogs until on the grill. You can serve these smoked sausage rolls with French fries on the side. Enjoy.

Smoked Sausage Rolls

Yield: 8 Servings

Ingredients:

White BBQ Sauce-

  • 1 1/2 cups mayonnaise
  • 1/4 cup white wine vinegar
  • 1 tablespoon coarsely ground black pepper
  • 1 tablespoon whole grain mustard
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 2 garlic cloves, finely minced (about 1 tablespoon)
  • 2 teaspoons prepared horseradish

Sauerkraut mixture-

  • 3 tablespoons olive oil (divided)
  • 1 small onion (sliced)
  • 1 (14-ounce) can sauerkraut, drained and squeezed dry
  • Pinch of salt and pepper

Other-

  • 3 14-ounce packages smoked sausage (or Polish Kielbasa)
  • 8 slices Swiss cheese
  • 8 bratwurst or hot dog buns

 

Directions:

  1. In a medium bowl combine mayonnaise, vinegar, salt, pepper, mustard, sugar, garlic and horseradish. Mix until well blended. Place into the refrigerator until ready to use.
  2. Heat 2 tablespoons of olive oil in a medium sauté pan over medium-high heat. Add the onion and sauté for about 4 minutes or until soft. Add an additional tablespoon of oil and add the drained sauerkraut to the skillet. Sauté for about 3 minutes or until the sauerkraut starts to brown. Season with salt and pepper and remove from heat.
  3. Slice the smoked sausage into 3 pieces and cut in half lengthwise. Lightly grease the grill grates and heat the outdoor grill to medium-high heat. Add the smoked sausage and grill for about 3 minutes per side or until nicely marked.
  4. Place a slice of swiss cheese onto each roll, add 2 grilled smokes sausage halves, top with some of the onion and sauerkraut mixture, and some white bbq sauce.

Here is a recipe for the Shanghai wings with wasabi ranch dressing just like at Chili’s restaurant. If you have never had this appetizer at Chili’s, it is basically breaded fried chicken coated with a ginger-citrus sauce and then served with a wasabi ranch dressing. These wings have an Asian flavor to them. The sauce gets a lot of its flavor from fresh ginger, soy sauce, lemon juice and lime juice. If you want to save some time buy breaded boneless wings from the store and coat them with the sauce. For the Wasabi-ranch dressing, the green food coloring is optional. This is another great recipe for the Super Bowl. Enjoy.

Ingredients:

  • 2 boneless skinless chicken breasts (cut into small chunks)
  • 1 cup all-purpose flour
  • 2 teaspoons salt
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon paprika
  • 1 egg
  • 1 cup milk
  • 4 cups vegetable oil (for frying)

Ginger-Citrus Sauce:

  • 1 1/4 cups water
  • 1 tablespoon corn starch
  • 3/4 cup dark brown sugar
  • 1/4 cup soy sauce
  • 2 tablespoons minced fresh ginger
  • 1 teaspoon minced garlic
  • 2 tablespoons lime juice
  • 1 tablespoon lemon juice
  • 1/4 teaspoon crushed red pepper flakes

Wasabi-Ranch Dressing:

  • 1/2 cup Ranch dressing
  • 2 tablespoons buttermilk
  • 1 teaspoon prepared horseradish
  • 1/2 teaspoon powdered wasabi
  • 1 drop green food coloring (optional)

 

Directions:

  1.  In a medium bowl combine flour, salt, black pepper, cayenne pepper and paprika. In another small bowl whisk together the egg and 1 cup of milk. Dip each chicken piece first into the egg mixture and then into the flour mixture. Repeat this process to that each chicken piece is double coated. Repeat until all of the chicken pieces are coated.
  2. To prepare the Wasabi-ranch dressing. In a small bowl whisk together ranch dressing, buttermilk, horseradish, powdered wasabi, and green food coloring. Cover and chill until the wings are done.
  3. To prepare the sauce–  Combine the cornstarch with 1 ¼ cups of cold water. Mix until dissolved. Pour the mixture into a medium saucepan. Add brown sugar, soy sauce, ginger, garlic, lime juice, lemon juice and crushed red pepper flakes. Bring the mixture to a boil over medium heat. When the sauce begins to bubble reduce the heat and simmer for 10-15 minutes or until thicken. Remove from heat and set aside.
  4. Heat oil in a deep-fryer to 375 degrees F. Cook the chicken pieces in batches for 5-6 minutes or until browned and fully cooked (the internal temperature has reached 165 degrees F.). Drain on a plate lined with paper towels.
  5. Place chicken pieces into a large bowl and mix with the sauce. Serve with the prepared Wasabi-ranch dressing.

If you want to make some delicious loaded fries that are a little different give these taco fries a try. These fries are loaded with taco meat, cheese, green onion and tomato. This is another great appetizer to serve for the Super Bowl or any party. These fries are easy to prepare easily be doubled to feed a crowd. You can add additional taco toppings as well such as lettuce, salsa, sour cream and guacamole. Enjoy.

Ingredients:

  • 1 bag frozen French fries
  • 1lb ground beef
  • 1 packet taco seasoning
  • 2 cups Colby-jack cheese
  • 2 roma tomatoes (diced)
  • 3 green onions (sliced)

 

Directions:

  1. Lay the fires onto a baking sheet and cook according to package directions. While the fries are cooking heat a large skillet to medium-high heat. Add the ground beef and cook while breaking up into chunks with a spatula. Drain any excess grease. Add the taco seasoning and water, and cook according to package directions.
  2. Remove the fries from the oven when they are almost crispy. Layer the taco meat over the fries. Sprinkle with cheese. Return to the oven and bake until the cheese has melted.
  3. Remove from the oven and top with tomatoes and green onions.

Frito Pie Hot Dogs Recipe

Frito Pie Hot Dogs
Frito Pie ingredients on top of hot dogs are great to prepare for the Super Bowl! There are only a few ingredients involved to make this recipe. Hot dogs are topped with chili, cheese and Frito chips. You can use whatever your favorite brand of chili is for this recipe. You can also cook the hot dogs however you like… the ones in the picture were grilled on an outdoor grill. I like to top these delicious hot dogs with green onions. Enjoy.

Yield: 4-8 Servings

Ingredients:

  • 8 beef hot dogs
  • 1 bag shredded Colby-jack cheese
  • 1 can chili
  • A bag of Frito chips
  • Sliced green onions (optional)

 

 

 

 

 

Directions:

  1. Heat an outdoor grill to medium-high heat. Add the hot dogs and cook until lightly charred and heated through. You can toast the buns if you want by turning the grill to low and placing the buns cut side down onto the grill until lightly toasted.
  2. In a medium sauce pan heat the chili over medium-high heat until hot.
  3. Add the hot dogs to the buns. Top with chili, shredded cheese, and crushed Frito chips. If you want to melt the cheese you can bake the hot dogs in the oven at 350 degrees F. on a baking sheet until the cheese has melted. Top with green onions.
