Stuffed Chicken Caprese
This stuffed chicken caprese consists of chicken stuffed with both fresh and sundried tomatoes, fresh basil, and cheese. The chicken is coated in a balsamic glaze. The glaze is just a simple combination of garlic, balsamic vinegar, and brown sugar. The chicken is first stuffed with the ingredients, then fried in the pan and placed into the oven to finish the cooking process. This dish is great to serve for dinner and is not very difficult to prepare at all. I like to serve this stuffed chicken caprese with wild rice. Enjoy.

Stuffed Chicken Caprese

Yield: 4 Servings

Ingredients:

  • 4 boneless skinless chicken breasts
  • Salt and pepper (to taste)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 2 roma tomatoes (thinly sliced)
  • ¼ cup sun dried tomato strips in oil
  • 4 mozzarella cheese slices
  • 12 basil leaves (divided)
  • 4 garlic cloves (minced)
  • 1/3 cup balsamic vinegar
  • 2 tablespoons brown sugar

 

Directions:

  1. In a medium bowl combine garlic, balsamic vinegar, and brown sugar. Mix well and set aside.
  2. Preheat the oven to 350 degrees F. Cut a pocket that is about ¾ of the way through each chicken breast, being careful not to cut all the way through.
  3. Season the chicken on both sides with salt, pepper, oregano and basil. Pour 1 teaspoon of sundried tomato oil over each chicken breast, rubbing some of the seasoning inside the pockets.
  4. Fill each chicken breast with 2 slices of fresh tomato, 2 teaspoons of sundried tomato strips, one slice of mozzarella cheese and 4 fresh basil leaves. Seal with 4 toothpicks diagonally to keep the filling from coming out while cooking.
  5. Heat 2 teaspoon of sundried tomato oil (or olive oil) in a large skillet over medium-high heat. Add the chicken and fry for 2 minutes on each side until golden. Pour the balsamic vinegar mixture into the pan around the chicken and bring to a simmer while stirring occasionally, until the glaze has slightly thickened (about 2-3 minutes).
  6. Transfer to a baking sheet and place into the oven and continue to cook for 10-15 minutes or until the chicken is cooked through and the cheese has melted.
  7. Remove the toothpicks and drizzle with pan juices.

Chicken Parmesan Manicotti
The ingredients and chicken parmesan go great stuffed into manicotti shells. These chicken parmesan manicotti are loaded with shredded chicken, ricotta cheese, and parmesan cheese. The stuffed manicotti shells are topped with a homemade sauce and then baked in the oven. This recipe gets a lot of flavor from seasonings such as basil and oregano. I like to serve this dish with garlic bread on the side. Enjoy.

Chicken Parmesan Manicotti

Yield: 3-4 Servings

Ingredients:

  • 7 manicotti shells (cooked according to package directions)
  • `1 cup ricotta cheese
  • ½ cup shredded parmesan cheese
  • 1 cup shredded cooked chicken
  • 1 egg
  • 1 teaspoon oregano
  • Salt and black pepper (to taste)
  • 1 (28 ounce) can Italian style crushed tomatoes
  • 2 tablespoon grated parmesan cheese
  • 1 tablespoon chopped basil leaves
  • ¼ cup shredded parmesan cheese
  • 2 cups shredded mozzarella cheese
  • 6 basil leaves (chopped)

 

Directions:

  1. Heat the crushed tomatoes in a saucepan over low heat. Add 2 tablespoons of grated parmesan cheese and 1 tablespoon of chopped basil and stir frequently until the mixture starts to bubble. Spray a 9×13 inch baking dish with cooking spray. Spread a thin layer of the sauce onto the bottom of the baking dish.
  2. Preheat the oven to 350 degrees F.
  3. In a medium bowl  combine the cooked chicken, ricotta cheese, parmesan cheese, egg, oregano, salt and pepper and stir until well combined. Stuff each manicotti with about ¼ cup of the chicken and cheese mixture carefully so that the manicotti doesn’t tear. Place the stuffed manicotti shells in a layer over the sauce in the baking dish. Pour the remaining sauce over the shells. Top with shredded parmesan and mozzarella cheeses.
  4. Place into the oven and bake for 35 minutes or until hot and bubbly. Top with fresh basil and serve.

Kettle Chip Crusted Chicken
You can use kettle chips as a delicious coating for breaded chicken. This recipe is so easy to prepare and only consists of eggs, chicken and kettle chips. You can use different flavored kettle chips to make this chicken dish taste different every time. I have only tried a couple of flavors but my favorite so far is BBQ. Best of all, the chicken is baked and not fried. You can crush the kettle chips by placing them in a ziplock bag and crushing them with a rolling pin. You can also put them into a food processor. The chicken is dipped first in the beaten egg and then rolled in the kettle chips and then baked in the oven. I like to serve this recipe with rice. Enjoy.

Yield: 4 Servings

Ingredients:

  • 4 boneless skinless chicken breasts
  • 1 (8.5 ounce) bag kettle chips, any flavor
  • 2 eggs 

 

Directions:

  1. Preheat the oven to 400 degrees F. In a medium bowl beat the eggs. Place the kettle chips into a ziplock bag, seal and crush with a rolling pin. Place the crushed kettle chips into a shallow plate or pie dish.
  2. Dip each chicken breast first in the egg and then roll in the crushed kettle chips until well coated on both sides. Place onto a lightly greased baking sheet.
  3. Place into the oven and bake for 25-30 minutes or until fully cooked (the internal temperature has reached 165 degrees F.). The cooking time will depend on the thickness of the chicken breasts you are using.

Chicken Cordon Bleu Burger
If you enjoy chicken cordon bleu you may want to try making a burger with similar ingredients. This burger is a ground chicken patty seasoned, fried and topped with ham and swiss cheese. The burgers are topped with a mustard spread that is just a combination of mayonnaise and mustard. You can either grilled these, cook them in a frying pan or use a griddle. I personally used a griddle to cook these burgers. You can top the burgers with any additional items you like such as lettuce and tomato. For the seasoning blend, you can really use whatever you want but I used garlic and herb seasoning. Enjoy.

Yield: 4 Servings

Ingredients:

  • 1lb ground chicken
  • 1 tablespoon burger seasoning blend
  • 1 teaspoon olive oil
  • 4 slices deli ham
  • 4 slices swiss cheese
  • 4 hamburger buns

Mustard Spread-

  • 2 tablespoons yellow mustard
  • ½ cup mayonnaise

 

Directions:

  1. In a small bowl combine mustard and mayonnaise. Cover and refrigerate until needed.
  2. In a large bowl combine ground chicken and seasoning blend. Divide the seasoned meat into 4 patties.
  3. Heat olive oil in a large non-stick skillet over medium-heat. Cook the burger patties, turning frequently until browned on both sides and fully cooked (the internal temperature has reached 165 degrees F.), about 5 minutes per-side. Turn off the heat and top each patty with a slice of ham and a slice of swiss cheese. Cover the skillet to allow the cheese to melt.
  4. Serve patties on hamburger buns spread with the mustard spread. Add other toppings if you desire.
