If you are looking for a good marinade recipe for chicken, you may want to consider making this Tuscan chicken marinade. It has great flavor and is easy enough to prepare. The Tuscan chicken marinade is used both as a marinade and as a sauce for serving after the chicken is cooked. If you don’t want to grill the chicken it can be baked in the oven. This recipe gets a lot of flavor from sundried tomatoes, vinegar, basil and oregano. The marinade is prepared in the blender and then can be used in a ziplock bag with the chicken. Enjoy.

Tuscan Chicken Marinade

Tuscan Chicken Marinade

Ingredients:

  • ¼ cup sundried tomatoes packed in oil (plus ¼ cup of oil from the jar)
  • ¼ cup warm water
  • ¼ cup red wine vinegar
  • 1 tablespoon grated Parmesan cheese
  • 2 teaspoons Dijon mustard
  • 2 teaspoons minced garlic
  • ¼ cup loosely packed fresh basil leaves
  • 1 tablespoon fresh oregano leaves
  • ¼ cup extra virgin olive oil
  • Salt and pepper, to taste
  • 1lb boneless skinless chicken breasts

 

Directions:

  1. Place all of the ingredients for the marinade in a blender and puree until smooth. Pour ¾ cup of the marinade into a large zip lock bag. Reserve about ¼ cup of the marinade for serving. Add the chicken breasts to the bag and marinate for at least 30 minutes or up to overnight.
  2. Lightly grease the grates of an outdoor grill. Preheat the grill to medium-high heat. Remove the chicken from the bag and discard the marinade.
  3. Place the chicken onto the grill and cook for about 5 minutes per side or until the chicken is fully cooked (the internal temperature has reached 165 degrees F.). Serve with the reserved marinade.

Having a good dry spice rub on hand to prepare grilled chicken is a must. This spice rub uses a simple combination of spices to give your grilled chicken a delicious flavor. Sure, salt and pepper is fine but why not even add more flavor with a good dry rub? The best part is you probably have all or most of these ingredients on hand already. This spice rub is a combination of garlic powder, cumin, coriander, paprika, salt and pepper. This recipe makes enough rub to cover about 3 chicken breasts.   • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • ½ teaspoon ground coriander
  • ½ teaspoon smoked paprika
  • ½ teaspoon sea salt

  • 2 tablespoons olive oil

 

Directions:

  1. In a small bowl combine all of the ingredients and mix until well combined. Use for rubbing on chicken before grilling.

If you enjoy the Power Menu burrito from Taco Bell you may want to give this recipe a try. This burrito consists of marinated grilled chicken, romaine lettuce, cheese, guacamole, sour cream, pico de gallo and avocado ranch dressing wrapped up in a tortilla. To save a little time I you can use premade guacamole and pico de gallo. You may also be able to find avocado ranch dressing in the store now. The best part about this recipe is the citrus grilled chicken. The chicken is marinated in ingredients such as tomatillo, cilantro, garlic and chili pepper. Enjoy.

Yield: 8 Servings

Ingredients:

Chicken Marinade-

  • 1 fresh tomatillo
  • 1 white onion, cut into quarters
  • ½ fresh Anaheim Green Chile, seeds and veins removed
  • 3 cloves fresh garlic
  • 2 tsp olive oil
  • 1 ½ tablespoon fresh lemon juice
  • ½ cup chicken broth
  • 1 teaspoon salt
  • 2 teaspoon sugar
  • 1 teaspoon onion powder
  • ½ teaspoon paprika
  • ½ teaspoon ground black pepper
  • 2 Tablespoon fresh chopped cilantro
  • 1 Tablespoon fresh chopped parsley
  • 4 large boneless, skinless chicken breasts

Avocado-Ranch Dressing-

  • 1/8 cup ranch dressing
  • 1/8 cup buttermilk
  • ½ avocado
  • 2 pinches salt
  • 2 tablespoons sour cream

Other-

  • 1 cup prepared guacamole
  • 1 cup prepared pico de gallo
  • Shredded Colby-jack cheese
  • 2 cups chopped romaine lettuce
  • Sour cream
  • 8 large flour tortillas

 

Directions:

  1. In a blender combine all of the ingredients for the marinade. Process until smooth and pour into a large zip lock bag. Add the chicken breasts and seal the bag. Place into the refrigerator and allow the chicken to marinate for at least 8 hours.
  2. In a blender combine avocado, ranch dressing, buttermilk, salt and sour cream. Blend until smooth. Cover and refrigerate until needed.
  3. Lightly grease the grates of an outdoor grill. Heat the grill to medium-high. Remove the chicken breasts from the marinade and place onto the grill. Cook, turning at least once, for about 5-6 minutes per-side or until fully cooked (the internal temperature has reached 165 degrees F.). Remove the chicken from the grill and slice it into thin strips.
  4. Spread a little of the avocado ranch dressing onto the center of a tortilla. Add some romaine lettuce, some of the grilled chicken pieces, add on some cheese and a little guacamole, sour cream and pico. Roll up into a burrito.

If you are looking to add a little bit of delicious flavor to your grilled chicken, a marinade is an excellent way to do that. This marinade gives the chicken a lot of flavor from ingredients such as soy sauce, garlic powder, brown sugar, fresh thyme, and lemon juice. You will probably have most of these ingredients on hand already. You will want to marinate the chicken for at least 8 hours for the best flavor. Once the chicken is grilled you can serve it as is or you can slice it and use it in salad or wraps. Enjoy.

  • ½ cup balsamic vinegar
  • ¼ cup Worcestershire sauce
  • 1/8 cup lemon juice
  • ¾ cup brown sugar
  • 2 tablespoons chopped fresh rosemary
  • 2 tablespoons Dijon mustard
  • 1 teaspoon ground black pepper
  • 2 teaspoons garlic powder
  • 6 boneless skinless chicken breasts

 

Directions:

  1. Combine all of the marinade ingredients in a large ziplock bag. Add the chicken and seal the bag. Shake a little bit to coat the chicken with the marinade. Place into the refrigerator and allow the chicken to marinate for at least 8 hours to overnight.
  2. Lightly grease the grates of an outdoor grill. Heat the grill to medium-high heat. Remove the chicken from the marinade and grill, turning at least once for 5-6 minutes per side or until fully cooked (the internal temperature has reached 165 degrees  F.).
