Chicken and Rice Casserole
Chicken and wild rice casserole is easy to prepare and tastes just amazing. This recipe uses very few ingredients and will be ready in no time at all. Prepared wild rice is layered in a baking dish with chicken, cheese, a cream of chicken soup mixture and herb stuffing. The only thing that needs to be cooked in advance for this recipe is the wild rice. The chicken is sliced into chunks and then placed into the casserole dish raw and fully cooked in the oven during the baking process. I like to serve this casserole with a salad on the side or by itself. Enjoy.

Chicken and Rice Casserole

Yield: 8 Servings

Ingredients:

  • 1 (6 ounce) package long grain and wild rice
  • 4 boneless skinless chicken breasts, cut into bite sized pieces
  • 2 cups Monterey jack cheese
  • 1 can cream of chicken soup
  • ¼ cup chicken broth (or water)
  • Paprika
  • 3 cups herb seasoned stuffing
  • ½ cup butter (melted)

 

Directions:

  1. Preheat the oven to 325 degrees F.
  2. Cook the wild rice according to package directions. Spray a 9×13 inch baking dish with cooking spray. Pour the prepared rice into the bottom of the baking dish and spread in an even layer. Cover rice with 1 cup of the cheese and then layer on the uncooked chicken pieces. Sprinkle the chicken with paprika to taste. Sprinkle the remaining cheese on top of the chicken.
  3. Combine cream of chicken soup and chicken broth and spoon over the top of the cheese. Add the melted butter to the stuffing mix and spread over the top of the casserole.
  4. Place into the oven and bake for 60 minutes.

Chili Cheeseburger  Bake
This chili cheeseburger bake is loaded with delicious ingredients. To be honest, it is actually more like a taco bake without any tortillas. The casserole is layered with a taco meat and vegetable mixture, refried beans and taco sauce, chili cheese flavored frito chips and tons of shredded cheddar cheese. This casserole is easy to prepare and you can easily double it to serve a lot of people if needed. You can top this off with your favorite chili or taco ingredients. Enjoy.

Chili Cheeseburger Bake

Yield: 4 Servings

Ingredients:

  • 1lb lean ground beef
  • 2 cups frozen bell pepper and onion stir-fry
  • 1 (11-oz) can whole kernel sweet corn, drained
  • 1 (1 oz) package taco seasoning
  • 1 (16 oz) can refried beans
  • ½ cup taco sauce
  • 2 cups chili-cheese corn chips
  • 1 cup shredded cheddar cheese (or more)

 

Directions:

  1. Preheat the oven to 375 degrees F. Spray an 8-inch square baking dish with nonstick cooking spray
  2. In a large skillet over medium-high heat brown the ground beef while breaking up until chunks with a spatula. Drain any excess grease. Add the bell pepper and onion stir-fry, corn, taco seasoning mix and ¼ cup water. Mix well. Cook over medium-high heat for 5 to 6 minutes or until the liquid is absorbed, stirring occasionally.
  3. Meanwhile in a small bowl, combine the refried beans and taco sauce. Mix well.
  4. Spoon half of the beef mixture onto the bottom of the prepare baking dish. Top with half of the bean mixture and half of the corn chips. Top with the remaining beef mixture and bean mixture. Cover with foil. Place into the oven and bake for 30 minutes.
  5. Remove from the oven. Uncover the baking dish and top with the shredded cheddar cheese and remaining corn chips.
  6. Return to the oven and bake uncovered for an additional 10 to 12 minutes or until heated through and the cheese has melted.

Beef Macaroni Casserole
Beef macaroni casserole is delicious and easy to prepare for dinner. This recipe uses common ingredients and can be prepared quickly. Ground beef is mixed with ingredients such as bell pepper, onion, garlic, tomato sauce and various seasonings. Then it is mixed in a casserole dish with elbow macaroni and topped with cheddar cheese. I actually layered the cheese with the macaroni mixture and it was amazing. You can adjust the seasonings to your taste. If you want you can use ground turkey or chicken in place of the beef. I like to serve this casserole dish with garlic bread. Enjoy.

Ingredients:

  • 1lb elbow macaroni
  • 2 tablespoons vegetable oil
  • 2 cups chopped green bell pepper
  • 2 cups chopped onion
  • 1 tablespoon chopped garlic
  • 2lbs lean ground beef
  • 3 cups canned crushed tomatoes
  • Salt and pepper
  • 1 teaspoon dried basil
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 2 to 3 cups shredded cheddar cheese

 

Directions:

  1. Preheat the oven to 350 degrees F. Cook the macaroni according to package directions. Drain and set aside.
  2. Heat oil in a large skillet over medium-high heat. Add peppers, onion and garlic and sauté until soft. Add the ground beef and sauté while breaking up into chunks with a spatula or spoon until browned. Add the crushed tomatoes, salt and pepper to taste, basil, cumin and oregano.
  3. Combine the beef mixture with the cooked macaroni. Spread the mixture into a greased 9×13 inch baking dish. Top with the cheddar cheese and bake for 20-25 minutes or until the cheese is lightly browned and bubbly.

Chicken and Dumpling Casserole Recipe

Chicken and Dumpling Casserole
This chicken and dumping casserole is amazing to serve for dinner. This is almost like a pot pie but way easier to prepare. You can use leftover cooked chicken for this recipe or the meat from a cooked rotisserie chicken. A sauce is prepared in the pan with chicken broth and various vegetable and then mixed with the cooked chicken. The dumplings are made from ingredients such as flour, milk and eggs. There is a good chance you probably have most of the ingredients for the dumplings on hand already. You can easily double this recipe to serve more people if you want. Enjoy.

Yield: 4 Servings

Ingredients:

  • 3 tablespoons olive oil
  • ¾ cup chopped onion
  • 1 ¼ cups chopped carrots
  • ¾ cup chopped celery
  • 3 cups chicken broth
  • 3 tablespoons flour
  • 2 ½ cups chopped rotisserie chicken
  • 1 ¼ cups frozen peas
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper

Dumplings-

  • 1 cup flour
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 egg
  • 1/3 cup milk

 

Directions:

  • Heat the olive oil in a large skillet over medium-high heat. Add the onion, carrots, and celery. Saute until tender. Add the flour and ¼ cup of the chicken broth. Stir until the mixture thickens and then slowly add the rest of the chicken broth. Cook over medium heat until the sauce thickens, about 3 minutes. Add the chicken, peas, salt and pepper.
  • Preheat the oven to 400 degrees F. Pour the chicken mixture into a baking dish.
  • To prepare the dumplings—in a medium bowl add flour, baking powder and salt. Whisk until well combined. Add egg and milk and mix with a wooden spoon until just combined. Drop the dough over the chicken mixture with a spoon (the dough will make about 8 dumplings).
  • Place into the oven and bake for 15 minutes or until the dumplings are golden brown.
