Malibu Chicken Recipe

This is a copycat recipe for the Malibu Chicken at Sizzlers Restaurant. Unfortunately, we not do have a Sizzler’s here but the recipe looked delicious. Malibu chicken is breaded chicken topped with ham and Swiss cheese and served with a honey mustard sauce. I used black forest ham for this recipe but really any type of sliced deli ham will work. The honey mustard sauce is a combination of mustard, mayonnaise and honey. The chicken is coated with egg and a seasoned bread crumb mixture and then baked in the oven. You can brown the chicken in a skillet in hot oil before baking if you would like. Simply, heat about ½ inch of vegetable oil in a deep skillet over medium-high heat and brown the chicken on both sides, transfer to a baking sheet, and finish cooking in the oven. I like to serve this recipe with flavored rice. Enjoy.

Malibu Chicken

Yield: 4 Servings

Ingredients:

  • 4 boneless skinless chicken breasts
  • 5 egg yolks
  • 3 tablespoons minced garlic
  • 1 cup panko bread crumbs
  • 1 cup parmesan cheese
  • 1 tablespoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 8 thin slices of ham
  • 4 slices Swiss cheese

Malibu Dipping Sauce-

  • 2 tablespoons Grey Poupon mustard
  • 3 tablespoons mayonnaise
  • 1 teaspoon yellow mustard
  • 1 teaspoon honey

Directions:

  1. Combine the egg yolk and garlic and pour into a sealable plastic bag. Place the chicken breasts inside of the bag and seal shut, making sure there is no extra air inside. Make sure the chicken is well coated with the egg mixture. Place into the refrigerator and marinate for 4 hours.
  2. Prepare the honey mustard dipping sauce by combining Grey Poupon, mayonnaise, yellow mustard, and honey in a small bowl. Mix well, cover and refrigerate until needed.
  3. Preheat the oven to 350 degrees F. In a medium bowl combine panko, parmesan cheese, garlic power, salt and pepper. Mix well. Remove the chicken from the bag and coat with the breadcrumb mixture on both sides. Place onto a greased baking sheet. Place into the oven and bake at 350 degrees F. for about 40 minutes or until the chicken is fully cooked (the internal temperature has reached 165 Degrees F.).
  4. Place 1 slice of ham and 1 slice of Swiss over the chicken and bake for an additional 2 minutes or until the cheese has melted. Serve with the malibu sauce for dipping.

Poutine Pizza Recipe

The ingredients of poutine go great on a freshly baked pizza. I came up with this idea from a poutine pizza that was on the menu at Pizza Hut in Canada recently. The sauce is a homemade gravy that gets a lot of flavor from beef broth, garlic, and ketchup. The pizza is topped off with French fries, sliced steak, and cheese curds. French fries may seem a little weird on a pizza and you may want to go easy on them. I like to use the home-style frozen French fries that you buy in the store but you can also make your own if you would prefer. This recipe is a little time consuming and I like to use a store bought pizza crust to save time. If there is any extra gravy you can use it to drizzle on top of the pizza or for dipping. If you are looking for a rather unique pizza recipe, give this one a try. Enjoy.

Poutine Pizza

Yield: 4 Servings

Ingredients:

  • 8 ounces skirt steak
  • salt and ground black pepper (to taste)
  • 1 tablespoon olive oil
  • 1lb pizza dough

Gravy-

  • 4 tablespoons unsalted butter
  • ¼ cup flour
  • 1 shallot (minced)
  • 1 garlic clove (minced)
  • 4 cups beef stock
  • 2 tablespoons ketchup
  • 1 tablespoon cider vinegar
  • ½ teaspoon Worcestershire sauce
  • salt and ground black pepper (to taste)

Other-

  • 15-20 frozen French fries (or less)
  • Oil (for frying)
  • 1 cup shredded mozzarella cheese
  • 1 cup white cheddar cheese curds

Directions:

  1. Preheat the oven to 425 degrees F. To make the gravy—Melt butter in a large deep skillet over medium heat. Once the butter has melted, whisk in the flour and cook while whisking until smooth for about 2 minutes. Add the shallot and garlic and cook until soft. Pour in the beef broth, a little at a time while whisking. Whisk in ketchup, vinegar, and Worcestershire sauce. Season with salt and pepper. Bring to a boil while whisking. Cook until the mixture has thickened (about 6 minutes).
  2. Heat oil in a deep fryer to 375 degrees F. Add the fries and cook until golden brown and crispy. Drain on paper towels (you can also bake them in the oven if you would prefer).
  3. Slice the steak into thin strips. Season with salt and ground black pepper. Heat olive oil in a large skillet over medium-high heat. Add the steak slices and cook while stirring occasionally until the steak has reached your desired doneness. Set aside.
  4. Roll and press the pizza crust onto a lightly greased baking sheet. Place into the oven and bake at 425 degrees F. for 7-8 minutes. Remove from the oven and spread a layer of the gravy over the partially baked pizza crust. Top with a layer of mozzarella cheese. Add steak slices on top of the mozzarella and add French fries and cheese curds on top.
  5. Return to the oven and bake for 10-15 minutes or until the crust is golden brown and the cheese has melted (the cheese curds may not be fully melted and that is fine, as long as the mozzarella is melted).

Chicken Artichoke Flatbread Recipe

This recipe is very similar to the chicken artichoke flatbread pizza at Outback Steakhouse. Flatbread is topped off with an artichoke spread, chicken, mozzarella cheese, and parmesan cheese and then baked in the oven. Once the pizza has finished baking it is then topped with additional fresh spinach and shredded parmesan cheese. The chicken can be grilled, baked or pan fried—whichever you would prefer. The artichoke spread is very similar to spinach and artichoke dip and consists of ingredients such as fresh spinach, canned artichokes and cream cheese. You can use a package of frozen spinach that is thawed instead of the fresh if you would prefer. If you are looking for a great tasting dinner or appetizer to serve for football season, this recipe is perfect for you. Enjoy.

Chicken Artichoke Flatbread

Yield: 4 Servings

Ingredients:

  • 2 whole flatbreads
  • 2 boneless skinless chicken breasts
  • salt and pepper

Artichoke spread-

  • 1 tablespoon butter
  • 2 shallots (minced)
  • 2 garlic cloves (minced)
  • 1 (15 ounce) can artichokes (drained)
  • 2 (8 ounce) packages cream cheese
  • 10 ounces fresh spinach (chopped)
  • 1 ½ cups mozzarella cheese
  • 1 ½ cups parmesan cheese

Directions:

  1. Season the chicken breasts on both sides with salt and pepper. Lightly grease the grates of an outdoor grill. Heat the grill to medium-high heat. Grill the chicken breast turning at least once for about 10 minutes per side or until the chicken is fully cooked (the internal temperature has reached 165 Degrees F). When the chicken has cooled enough to handle, slice it into thin strips.
  2. Chop the canned artichokes. In a small sauce pan melt butter over medium heat. Add the shallots and garlic. Season with salt and pepper. Cook for about 5 minutes until tender. Add the artichokes and cook for 3-5 minutes. Add the cream cheese and reduce the heat to medium low. Cook the mixture until the cream cheese melts and can be stirred easily. Add the spinach and cook for another minute just to heat through.
  3. Preheat the oven to 425 degrees F. Top the flatbreads with a layer of the cream cheese spread, followed by  even amounts of mozzarella and parmesan cheese and top with the grilled chicken.
  4. Place into the oven and bake for 8 minutes or until the flatbread is crisp and the cheese has melted. Top with additional parmesan and chopped spinach if desired.

Italian Baked Chicken Recipe

Italian Baked Chicken
During the colder months an excellent recipe to prepare in the oven is Italian baked chicken. This recipe consists of chicken coated with breadcrumbs and topped with marinara sauce, ricotta cheese, and mozzarella cheese. You can use your favorite brand of marinara sauce or even make your own if you want. This dish is very similar to chicken parmesan with the addition of ricotta cheese. The ingredients can easily be doubled if you want to make enough to serve 4 people. I like to serve this recipe with extra heated marinara and linguini noodles. Enjoy.

Yield: 2 Servings

Ingredients:

  • 2 boneless skinless chicken breasts
  • ¼ cup Italian breadcrumbs
  • 2 tablespoons parmesan cheese
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon garlic powder
  • salt and ground black pepper (to taste)
  • 1 egg (beaten)
  • ¼ cup ricotta cheese
  • ½ cup marinara sauce
  • 1 tablespoon fresh basil (chopped)
  • ½ cup mozzarella cheese

Directions:

  1. Preheat the oven to 425 degrees F. On a deep plate or pie dish combine breadcrumbs, parmesan cheese, Italian seasoning, garlic powder, and salt and pepper to taste. Line a baking sheet with aluminum foil. Lightly grease the baking sheet with cooking spray.
  2. In a medium bowl add the beaten egg. Dip the chicken first into the egg and then coat with the breadcrumbs until evenly coated. Pat in any excess breadcrumbs. Place chicken breasts onto the baking sheet.
  3. Place into the oven and bake at 425 degrees F. for 20 minutes or until the chicken is fully cooked (the internal temperature has reached 165 Degrees F.) and golden brown
  4. Remove from the oven and spread a layer of ricotta cheese over the chicken breasts. Spread a layer of marinara sauce over the cheese and ½ tablespoon of fresh basil over the marinara sauce. Top with a layer of mozzarella cheese.
  5. Place back into the oven and broil at 450 degrees F. for 5 minutes or until the cheese has melted. Top with additional basil and parmesan cheese if desired.
