Here is a copycat recipe for the cheesy fiesta potatoes from Taco Bell. This recipe consists of roast potatoes that are topped with sour cream and nacho cheese. The potatoes are seasoned with cumin, garlic powder, salt and pepper and then fried in the pan until golden brown. The cooking process is finished in the oven and these potatoes are ready to serve. The flavor is so good that you could eat these without the nacho cheese and sour cream if desired. You can also top these potatoes with additional ingredients such as green onion and hot sauce. Taco Bell Cheesy Fiesta Potatoes

Yield: 4 Servings

Ingredients:

  • ¼ teaspoon garlic powder
  • ¼ teaspoon ground cumin
  • 2 lbs russet potatoes (peeled and cut into 1 inch cubes)
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • Salt and pepper (to taste)
  • 1 cup nacho cheese (warmed)
  • ½ cup sour cream

 

Directions:

  1. Preheat the oven to 475 degrees F. In ziplock bag add the cumin, garlic powder, salt and pepper. Add the cubed potatoes, seal the bag and shake until the potatoes are coated evenly.
  2. Heat butter and olive oil in a large skillet over medium heat. Add the seasoned potatoes and cook, stirring frequently, until they are golden brown on all sides, about 10 minutes. Cover and cook for an additional 10 minutes or until the potatoes are tender.
  3. Transfer the potatoes to a non-stick baking sheet and bake at 475 degrees F for 10 minutes, turning occasionally until the potatoes are nice and crisp.
  4. Remove from the oven and place into separate bowls and top with some nacho cheese and sour cream.

Unfortunately, I don’t have a Popeye’s restaurant around here but I have always wanted to try their food, so I decided to prepare this copycat recipe for popcorn shrimp. This recipe is very easy to prepare. Raw shrimp is dipped in egg and then rolled in a seasoned flour mixture and fried. You should remove the tails from the shrimp before breading them that way they are easy to eat. I used a deep-fryer for this recipe but a deep skillet with an inch or two of oil will work great as well. Enjoy.

Yield: 4 Servings

Ingredients:

  • 1lb raw shrimp (peeled, deveined and tails removed)
  • 1 1/3 cups flour
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 1/2 tablespoons sea salt
  • 1 1/2 tablespoons ground black pepper
  • 1 tablespoons ground white pepper
  • 2 teaspoons cayenne pepper
  • 2 teaspoons paprika
  • 2 teaspoons oregano
  • 2 teaspoons thyme
  • 6 eggs
  • Vegetable oil (for frying)

 

Directions:

  1. In a large bowl combine flour, onion powder, garlic powder, salt, black pepper, white pepper, cayenne pepper, paprika, oregano and thyme. Mix well. In another bowl whisk together the eggs.
  2. Dip each shrimp first in the egg and then coat in the flour mixture. Heat about 1-2 inches of oil in a deep frying pan to 350 degrees F.
  3. Fry the shrimp in batches for about 2-3 minutes per batch or until golden brown in color. Drain on a plate lined with paper towels.

Here is a recipe for the Shanghai wings with wasabi ranch dressing just like at Chili’s restaurant. If you have never had this appetizer at Chili’s, it is basically breaded fried chicken coated with a ginger-citrus sauce and then served with a wasabi ranch dressing. These wings have an Asian flavor to them. The sauce gets a lot of its flavor from fresh ginger, soy sauce, lemon juice and lime juice. If you want to save some time buy breaded boneless wings from the store and coat them with the sauce. For the Wasabi-ranch dressing, the green food coloring is optional. This is another great recipe for the Super Bowl. Enjoy.

Ingredients:

  • 2 boneless skinless chicken breasts (cut into small chunks)
  • 1 cup all-purpose flour
  • 2 teaspoons salt
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon paprika
  • 1 egg
  • 1 cup milk
  • 4 cups vegetable oil (for frying)

Ginger-Citrus Sauce:

  • 1 1/4 cups water
  • 1 tablespoon corn starch
  • 3/4 cup dark brown sugar
  • 1/4 cup soy sauce
  • 2 tablespoons minced fresh ginger
  • 1 teaspoon minced garlic
  • 2 tablespoons lime juice
  • 1 tablespoon lemon juice
  • 1/4 teaspoon crushed red pepper flakes

Wasabi-Ranch Dressing:

  • 1/2 cup Ranch dressing
  • 2 tablespoons buttermilk
  • 1 teaspoon prepared horseradish
  • 1/2 teaspoon powdered wasabi
  • 1 drop green food coloring (optional)

 

Directions:

  1.  In a medium bowl combine flour, salt, black pepper, cayenne pepper and paprika. In another small bowl whisk together the egg and 1 cup of milk. Dip each chicken piece first into the egg mixture and then into the flour mixture. Repeat this process to that each chicken piece is double coated. Repeat until all of the chicken pieces are coated.
  2. To prepare the Wasabi-ranch dressing. In a small bowl whisk together ranch dressing, buttermilk, horseradish, powdered wasabi, and green food coloring. Cover and chill until the wings are done.
  3. To prepare the sauce–  Combine the cornstarch with 1 ¼ cups of cold water. Mix until dissolved. Pour the mixture into a medium saucepan. Add brown sugar, soy sauce, ginger, garlic, lime juice, lemon juice and crushed red pepper flakes. Bring the mixture to a boil over medium heat. When the sauce begins to bubble reduce the heat and simmer for 10-15 minutes or until thicken. Remove from heat and set aside.
  4. Heat oil in a deep-fryer to 375 degrees F. Cook the chicken pieces in batches for 5-6 minutes or until browned and fully cooked (the internal temperature has reached 165 degrees F.). Drain on a plate lined with paper towels.
  5. Place chicken pieces into a large bowl and mix with the sauce. Serve with the prepared Wasabi-ranch dressing.

If you want to make some delicious loaded fries that are a little different give these taco fries a try. These fries are loaded with taco meat, cheese, green onion and tomato. This is another great appetizer to serve for the Super Bowl or any party. These fries are easy to prepare easily be doubled to feed a crowd. You can add additional taco toppings as well such as lettuce, salsa, sour cream and guacamole. Enjoy.

Ingredients:

  • 1 bag frozen French fries
  • 1lb ground beef
  • 1 packet taco seasoning
  • 2 cups Colby-jack cheese
  • 2 roma tomatoes (diced)
  • 3 green onions (sliced)

 

Directions:

  1. Lay the fires onto a baking sheet and cook according to package directions. While the fries are cooking heat a large skillet to medium-high heat. Add the ground beef and cook while breaking up into chunks with a spatula. Drain any excess grease. Add the taco seasoning and water, and cook according to package directions.
  2. Remove the fries from the oven when they are almost crispy. Layer the taco meat over the fries. Sprinkle with cheese. Return to the oven and bake until the cheese has melted.
  3. Remove from the oven and top with tomatoes and green onions.
