BBQ Cheddar Stuffed Meatballs Recipe

BBQ Cheddar Stuffed Meatballs
These BBQ cheddar stuffed meatballs are a very delicious dinner to prepare. These meatballs use ingredients such as ground beef, breadcrumbs, egg, milk onion and garlic. The meat mixture is formed and then cubes of cheddar cheese are pressed into the center of the meatballs. Try and form the meat mixture around the cheese chunks as well as possible to avoid leaks. Chances are some of the cheese will leak out but you don’t want it all to. These meatballs are fully cooked in the oven, no pan-frying is required. The BBQ sauce is homemade and uses common ingredients which you may already have on hand. I like to serve these meatballs with macaroni and cheese. Enjoy.

BBQ Cheddar Stuffed Meatballs

Yield: 4 Servings


  • 1 1/2lbs ground beef
  • 3 ounces sharp cheddar cheese (cut into ½ inch cubes)
  • ½ cup finely chopped onion
  • 2 garlic cloves (minced)
  • 1 jalapeno pepper (seeded and minced)
  • 1 tablespoon chopped fresh parsley
  • 1 cup panko breadcrumbs
  • ½ cup milk
  • 1 egg
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper


  • 2 cups tomato ketchup
  • 2 tablespoons brown sugar
  • ½ cup cider vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon mustard powder
  • 1 teaspoon pure chili powder
  • ½ teaspoon ground black pepper


  1. Preheat the oven to 350 degrees F. Line a baking sheet with aluminum foil. Spray the baking sheet with non-stick cooking spray.
  2. To make the sauce- In a medium saucepan combine ketchup, brown sugar, cider vinegar, Worcestershire sauce, mustard powder, chili powder and ½ teaspoon of ground black pepper. Bring to a boil while whisking. Reduce heat and simmer for 5-10 minutes while stirring occasionally. Keep the sauce warm while the meatballs cook.
  3. In a large bowl combine breadcrumbs, milk and egg. Mix together and let the breadcrumbs absorb the liquid. Add in the onion, jalapeno and garlic. Add salt and pepper. Add the ground beef and work it together with your hands until mixed well.
  4. Roll up meatballs that are about the size of golf balls. Push a piece of the cheddar cheese into the center of each meatball and work a layer of meat over the cheese so that it is fully enclosed. Place onto the greased baking sheet. Repeat until all of the meatballs are prepared.
  5. Place into the oven and bake at 350 degrees F. for 30-40 minutes or until fully cooked (the internal temperature has reached 160 degrees F).
  6. Add the meatballs to the BBQ sauce on the stove and mix gently until coated.
